My Version of Sans Rival Cake

 It started when I felt I need a stress reliever from my days of work.  I thought why not try to make Sans Rival Cake which was my husband's favorite.  We are having a hard time looking for the one that tastes like what we are having in the Philippines.  So, my own version of Sans Rival Cake was born.  At first it was only cashew variant but to also meet the taste of our foreign friends, I made a Pistachio variant too.

What is Sans Rival?

It is a cake made of layers of meringue with a sweet, buttery filling and ground cashew in between.  It is often best served chilled and can last up to two weeks in the refrigerator or even in the freezer.
