Ube Macapuno Cupcake

Ube or Purple Yam is a version of a sweet potato but the color is purple.  You can commonly see it in the Philippines and mostly used as dessert such as ube jam, ube sticky rice and many more. 

Now I would like to share to you my own version of Ube Cupcake with Macapuno or coconut string incorporated in the batter.  In the recipe, I used the bottled Ube jam that were commonly bought here in the Filipino store.  You can also make your halaya as a replacement for it but, it is more tedious to do and time consuming, so I opted for the bottled one.  To achieve the flavor more, I also used a bit of ube flavoring.
